Some of my favorite meals are ones I just throw ingredients in a pan and hope it tastes good. And they usually taste better than expected. That’s what happened with this Paleo stir fried shrimp, fettuccine and vegetables dish!
A few weeks ago I traveled to Massachusetts to visit my friend Dana, also known as eats2know in the social media world. You would think we’ve been friends for years with how much we talk to each other on and offline, but we’ve it’s really only been a few short months. We met because of an Instagram post of hers last August (hmm, sounds familiar with how I met my Holistic Happening partner). We connected on social media, but our friendship blossomed offline as well. Visiting her felt like visiting an old friend that I’ve known forever. And if you’re not following her on Instagram, get on it, because she shares photos of delicious food, but it’s her captions that truly educated and inform her followers. She has a passion for building an engaging community and she inspires me every day to push myself harder than I would normally!
So when I visited, we made a delicious dinner together. No recipe, no measurements. Just real, whole foods packed with tons of flavor. Those are my favorite kinds of meals. I try to create delicious recipes for all of you to follow, but the truth is, most of my meals are made without recipes and without measuring ingredients. I try my best to translate those meals here so you can follow along, but my best advice is to cook from your heart and follow your intuition when it comes to adding ingredients. Go with your gut and what you know will taste great. And sometimes the flavors don’t blend and the meal is more of a combination of whatever is in your fridge, and that’s okay too. Cooking is about having fun and experimenting. It doesn’t have to be perfect every single time.
So what’s in this delicious pan?
Well, it started with sliced mushrooms and zucchini cooked in oil until they were soft. Then we added shrimp, seasoned with Primal Palate seafood seasoning blend and cooked for a few more minutes. Next we added grape tomatoes. Why? Because she had them in the refrigerator and they added a nice pop of color. And finally, we mixed everything with Cappello’s Fettuccine (cooked according to the package which only takes 90 seconds in boiling water).
There you have it; a perfectly thrown together meal that was cooked from the heart! And guess what? You don’t have to follow this so-called recipe. Use whatever vegetables you have on hand. Throw together meals are just that, thrown together based on what food you have in the refrigerator that needs to be used. There’s no right or wrong way to make these meals. Don’t have shrimp? Use chicken sausage instead. Don’t have zucchini? Use brussels sprouts. You can’t go wrong when you combine food in a pan and cook it as long as you do it with confidence that you will have a delicious meal in just a few minutes!

- 1 lb. shrimp, cleaned
- 1 package mushrooms, sliced
- 2 zucchini, cubed
- 1 cup grape tomatoes
- Primal Palate Seafood Seasoning
- Cooking fat (ghee, coconut oil, avocado oil)
- Cappello's Fettuccini
- Begin by bringing a pot of water to a boil and adding Cappello's Fettuccine. Cook for 90 seconds according to the package, drain and set aside.
- In a large pan, add cooking fat. Once it is hot, add mushrooms and zucchini and cook for about 5-8 minutes, until soft.
- In the same pan, add shrimp, season with Primal Palate seafood seasoning blend and cook for 2 minutes on each side.
- Add grape tomatoes and cook for 1-2 minutes.
- Finally, add the cooked fettuccine to the pan and combine all ingredients.
- Serve in deep bowl and enjoy!
