Gadgets have taken over my kitchen so the last thing I needed was a new one. But my latest obsession has led me to the most delicious Whole30 air fryer rotisserie chicken recipe!
I’ve got a slow cooker, an instant pot, Kitchenaid mixer, food processor, immersion blender, Nutribullet, and a dehydrator. So when I told Ryan that I was buying an air fryer he begged me not to. We live in a small NYC apartment with barely enough counter space to cut and cook all my meal prep! But I think the air fryer is our new favorite kitchen gadget!
What is an air fryer?
The air fryer is a kitchen tool that circulates hot air through the machine, and gets your food super crispy without all the added oil we’re accustomed to with fried food. Now I haven’t had fried foods in years! And roasted up veggies in the oven, or baking french fries does not replace fried foods in any way! A chicken cutlet coated in almond flour and then baked and broiled cannot compare to a fried chicken cutlet.
But deep-fried foods are high in fat and calories and can cause some serious weight gain. And the fat has to be high heat so it’s always canola or peanut oil being used. Since eliminated vegetable oil and legumes from my diet, fried foods were out of the question.
But now the air fryer has brought the satisfying crunch back into my life. Get ready for some delicious recipes coming your way for french fries and air fried vegetables. But first, let’s start with a classic – rotisserie chicken.
Whole30 Air Fryer Rotisserie Chicken
Most weeks I bake chicken, or shred it in my Instant Pot as part of my meal prep. But one thing I truly love are pre-cooked rotisserie chickens. They an inexpensive protein and they always taste so juicy and moist. I’ve never been able to cook chicken that tastes just as good as rotisserie chicken. Until now!
I rarely cook chicken with the skin on because it just gets soggy. But I always eat the skin on the organic rotisserie chickens that I buy because they’re super crispy and that’s where most of the spices and flavor are. Now that I’ve got the air-fryer, you better believe I’m eating chicken with the skin on again!
The air fryer isn’t meant to save time when cooking recipes. The rotisserie chicken still takes 45 minutes to cook, the same time as it takes to cook a chicken breast in the oven. But it does keep the chicken juicy and the skin super crispy. The chicken is really easy to cook.
First you want to pre-heat the air fryer to 375 degrees. Start by drizzling Primal Kitchen Foods avocado oil over the chicken and seasoning it with your favorite spices. Mine are Primal Palate Super Gyro Blend, and either the New Bae or Meat & Potatoes Seasoning!
Then place the whole chicken in the basket of the air fryer. Cook for 30 minutes.
Then open the air fryer, flip the chicken and add more seasoning! Close up the air fryer and cook the chicken for another 30 minutes!
Turn the air fryer off, unplug it and open it up. Remove the chicken from the basket and set it aside to cool for 5 minutes before slicing.
And that’s it! Homemade Whole30 air fryer rotisserie chicken. You’ve got that delicious crispy skin without all the oil!
Another great benefit of the air fryer? It doesn’t heat up my tiny kitchen the same way using the oven does. So the air fryer is going to be used every day in the summer!
