My motto is that life should be wrapped in bacon. And everything tastes better topped with an egg. But back to the bacon. It adds great flavor to any dish so this Whole30 bacon wrapped chicken recipe is an easy and delicious one that you will definitely want to make!
This is one of those recipes that I feel silly writing up because it’s so straight forward and simple. But hey, we all like to follow directions and feel like we did something right, so of course I’m sharing this one with you. I love the flavor of the bacon and chicken (you can of course use turkey bacon if you don’t eat pork), and my goal is to make eating delicious fun and easy. This recipe is perfect for adults and kids.
I also love that it’s made on one pan so there’s less to clean up. And it’s perfect for any meal including breakfast because who doesn’t love bacon in the morning, or chicken for dinner! It’s the best of all worlds in one flavorful bite!
The Healthy Take On Bacon
So here’s the thing with bacon. It is pork so make sure you’re buying high quality packaged bacon, or go to your local butcher for the best and thickest slices. Most conventional bacon though contains a lot of chemicals, additives and added sugar. Which makes it not healthy to eat and defeats the whole purpose of eating a clean, whole foods diet.
But there are some great benefits to eating pork, including it being a delicious protein. It’s also a complete source of all the amino acids that help with muscle growth and controlling blood sugar levels in our body. And don’t let the high levels of saturated fat scare you away, remember it’s the good kind of fat! Saturated fat helps with brain function, helps white blood cells fight off viruses and bacteria, and helps bones take in and use calcium effectively.
Whole30 Bacon Wrapped Chicken
So now that we’ve covered the health stuff about bacon before I get negative comments about the damage eating bacon can do to my body, let’s move onward with this recipe.
It’s super easy to make, like all of my favorite recipes are.
First you want to pat the chicken thighs dry and season with my favorite Primal Palate Meat & Potatoes Seasoning (or any blend of spices of your choice). I didn’t use too much salt since the bacon adds a lot of salty flavor naturally. But I love the spice of the Primal Palate blend.
Then, simply wrap each chicken thigh in bacon.
Bake the chicken in the oven for 25-30 minutes. Option to pan-fry the chicken after removing them from the oven (or broil for a few minutes) to get the bacon extra crispy. Just make sure to bake the chicken for a little less time so you don’t overcook them and leave them dry. Nobody likes dry chicken!
And that’s it! Serve with your favorite veggies on the side.
I cooked some purple sweet potatoes on the same pan as the chicken for this specific meal. It made for an even easier dinner with everything being cooked on one pan, and the potatoes soaked up that delicious tasting bacon fat!
