Chicken Cacciatore has always been a favorite of mine. It combines all my favorite flavors and foods into one dish. And now I’ve got a simple and delicious Whole30 Slow Cooker Chicken Cacciatore recipe for you that will save you a lot of time and still give you all the flavors you love!
There is just something so classic and cozy about Chicken Cacciatore. And it really is such a clean, whole foods dish. With simple ingredients like chicken thighs, mushrooms, onions, and tomato sauce, you’ll feel full and satisfied with every single bite. It’s also a recipe that can be altered based on any ingredients you have in your refrigerator. I love seeing recipes as templates to create and not as definitive things I have to follow. So if you don’t have mushrooms, or just don’t like them then leave then out! Add some carrots if you’ve got those, and peas (if you’re not paleo or following the Whole30).
Now when I meal prep, I’ve got the oven on, the Instant Pot going, and multiple burners on my stove creating delicious meals for me and Ryan. It’s a lot of things going at the same time and in NYC, we’ve got limited counter space and can only fit a few pans in the oven before things just start smoking and causing mayhem. So my slow cooker is the ultimate kitchen tool that I suggest everyone get. Not only can you get an entire weeks worth of meals in one pot cooked up, but it’s also brainless – just set and forget! You don’t have to be good at cooking, or even enjoy it to get a slow cooker recipe going!
Whole30 Slow Cooker Chicken Cacciatore
So this recipe is very simple and it starts with add all the vegetables in the slow cooker with some spices and ghee. I love using Primal Palate super gyro blend and Pink Himalayan salt, but this is where recipes ge fun because you can use any spices you enjoy to create the flavor profile you like. I also really don’t measure, but you do want to add more spices when using a slow cooker than you would if you were just roasting chicken in an oven. That’s because the dish cooks for a long time at a low heat and the flavors can cook out. But make sure you sprinkle every piece of chicken evenly and mix all of the vegetables well because the flavors don’t spread out and you don’t open the slow cooker to mix during the cooking process. So once it’s set, that’s where it will stay for 4.5 – 8 hours!
Okay, so you’ve got your veggies, ghee and seasoning all mixed up well and now you want to add the tomato sauce and mix it all up again. I love RAOS Arrabbiata sauce because it’s got a great kick to it. You can use marina sauce, tomato & herb sauce, or just a can of crushed/diced tomatoes.
Then add the seasoned chicken thighs to the slow cooker and mix the tomato and veggie sauce on top of the chicken.
Cover the slow cooker, set it to low and let it cook for 4.5 hours! This is where you set it and forget it.
Now if you’re headed to work for the day and you’re like “but I will be gone for 9 hours,” don’t worry! The slow cooker will turn to warm on it’s own when it’s done cooking and you’re food will not be ruined or overcooked. You can also put all the food in and cook this up over night so in the morning it’s ready! Trust me, you’ll be woken up to the best smelling food ever!
So that’s it – the easiest, simplest, Whole30 Slow Cooker Chicken Cacciatore. And how do I know it’s good? Because Ryan went back for seconds and he rarely does that! He loves his smaller meals more frequently throughout the day, but he scarfed down two servings of this and what was a serving of 4 turned into a serving for 2 real quick!
Whole30 Instant Pot Chicken Cacciatore
You can also make this dish in the Instant Pot if you are short on time and want it ready in 45 minutes instead of 4.5 hours.
Press the ‘Saute’ button and add the ghee. Once it’s hot add all of the veggies and saute for 5 minutes until the onions are soft. Then add the tomato sauce and chicken thighs and cover the Instant Pot. Press Manual and set the time to 25 minutes so the chicken cooks on high pressure. Once it’s done cooking, let it naturally release for about 10 minutes before hitting “Keep Warm/Cancel” and opening the cover.

- 1 onion, sliced
- 1 cup mushrooms, sliced
- 1 cup carrots, sliced
- 2 Tbsp. ghee, melted
- 3 tsp. garlic, minced
- 2 tsp. tomato paste
- 2 cups tomato sauce (or 1 can diced tomatoes)
- 1 cup broth (veggie, chicken or bone)
- 6-10 boneless and skinless chicken thighs
- 2 tsp. seasoning (Primal Palate super gyro is my favorite, or any kind of Italian seasoning)
- salt and pepper to taste
- Add the onions, mushrooms, carrots(and any other vegetables you want to add) ghee and seasonings in the slow cooker and mix everything well.
- Add the tomato sauce and tomato paste and mix to combine with the vegetables.
- Next, add the chicken thighs to the slow cooker and spoon the tomato and vegetable mixture on top of them (option to add more seasonings at this time).
- Cover the slow cooker and set it to 'Low" for 4.5 hours.
- Once it's done, open the lid and spoon into a big bowl or on top of mashed potatoes, spaghetti squash or a salad.
